您需要以某种方式将其余的源代码(car.cpp, motor.cpp和tires.cpp)包含在构建中。

您可以直接将它们与main.cpp一起添加到可执行文件:

set(MySources sources/car.cpp sources/motor.cpp sources/tires.cpp main.cpp)
add_executable(${EXECUTABLE_NAME} ${MySources})

或者你可以把它们变成一个库并链接到:

set(MyLibSources sources/car.cpp sources/motor.cpp sources/tires.cpp)
add_library(MyLib ${MyLibSources})
add_executable(${EXECUTABLE_NAME} main.cpp)
...
target_link_libraries(${EXECUTABLE_NAME} MyLib ${SFML_LIBRARIES})

还有几点需要注意:

如果可能的话,你应该避免使用link_directories(它自己的文档不鼓励使用它),并且它通常有助于在通过add_executableadd_library添加的文件列表中包含头文件,因为这些文件会出现在像MS Visual Studio这样的ide中。
